Healthy Salmon Beet Salad Recipe

Try this tasty salad loaded with healthy omega 3 fatty acids thanks to the salmon!

Salmon, Roasted beet, and goat cheese salad (1 serving, can easily double)

·      2 small beets

·      2 tbsp. crumbled goat cheese

·      4 cups spring mix lettuce

·      ½ cup sliced radishes

·      ½ cup sliced cucumbers

·      4 oz. salmon fillet

·      1/8 tsp. salt and pepper

·      1 tsp. canola oil (separated)

Dressing:

·      Juice from ½ lemon

·      ½ tsp. Dijon mustard

·      Salt and pepper to taste

·      ¼ tsp. minced garlic

·      1 tsp. olive oil

Directions:

Salad:

·Clean and slice beets. Toss beets with 1 tsp.olive oil and bake for 30-40 minutes at 400 degrees, flipping once.

·Heat medium sauté pan over medium high heat and sprinkle salmon with salt and pepper. Spray pan with cooking spray and cook salmon ~3-4 minutes/side or until desired doneness.

·Stir together lemon through garlic. Then slowly combine olive oil while constantly whisking.

· Top  plate with half of the spring mix, cucumber, goat cheese, and toss with dressing. Top with salmon.

Nutrition: 402 calories,22 g fat, 5 g sat fat, 13 g carbs, 3 g fiber, 8 g sugar, 37 g protein, 840 mg sodium.
